Let butter soften at room temperature for approximately 2 hours
Cream butter and sugar together on medium speed for 3 minutes
Add eggs and vanilla extract and mix on medium speed until combined
Add flour, cinnamon, salt, and baking powder. Mix on low speed until just combined
Scrape down sides of bowl to ensure all ingredients are thoroughly combined
Fold rolled oats, dried cherries, and white chocolate chips into batter
Preheat oven to 350 °F
Spray parchment lined baking tray with non stick cooking spray
Scoop cookies onto tray
Bake cookies for approximately 12 minutes or until center of cookie is set
Let cookies cool on baking tray for 5 minutes before transferring to cooling rack
