Chewy Oatmeal Cherry Cookies

Ingredients

  • 1 Cup All Purpose Flour Unbleached
  • 2 Cups Rolled Oats Old Fashioned
  • Cup Light Brown Sugar
  • ¾ Cup Butter Unsalted
  • 2 Eggs Large
  • ½ Tsp Cinnamon Ground
  • 1 TBSP Vanilla Extract Pure
  • ½ Tsp Salt
  • 1 Tsp Baking Powder
  • 1 Cup Dried Cherries
  • Cup White Chocolate Chips

Instructions

  • Let butter soften at room temperature for approximately 2 hours
  • Cream butter and sugar together on medium speed for 3 minutes
  • Add eggs and vanilla extract and mix on medium speed until combined
  • Add flour, cinnamon, salt, and baking powder. Mix on low speed until just combined
  • Scrape down sides of bowl to ensure all ingredients are thoroughly combined
  • Fold rolled oats, dried cherries, and white chocolate chips into batter
  • Preheat oven to 350 °F
  • Spray parchment lined baking tray with non stick cooking spray
  • Scoop cookies onto tray
  • Bake cookies for approximately 12 minutes or until center of cookie is set
  • Let cookies cool on baking tray for 5 minutes before transferring to cooling rack
  • Enjoy your fresh baked goodies

Notes

  • Cookie dough can be chilled in the refrigerator for 20 to 30 minutes before baking if you prefer a cookie that spreads less when baked
  • These chewy oatmeal cherry cookies are best when enjoyed the same day
  • Cookie dough can be pre portioned and frozen for future use
  • Old fashioned rolled oats work best in this recipe, although quick oats can be substituted in a pinch I highly recommend sticking with the old fashioned oats
