Ingredients

Orange Pound Cake

  • 1 Cup Butter softened
  • 1 Cup Sugar
  • 4 Eggs
  • Cup Cake Flour
  • 1 Tsp Baking Powder
  • ½ Cup Buttermilk
  • 4 Oranges
  • 2 Tsp Vanilla Extract

Orange Vanilla Glaze

  • 2 Cups Confectioners Sugar
  • 2 Tbsp Orange Juice
  • 1 Tbsp Vanilla Extract
  • 1 Tbsp Whole Milk
  • 1 Tbsp Orange Zest

Instructions

Orange Pound Cake

  • In a mixing bowl sift together cake flour and baking powder, set aside
  • In a separate bowl whisk together buttermilk, vanilla extract, and the juice from the remaining 3 oranges
  • In a stand mixer bowl cream softened butter and granulated sugar until light and fluffy; approximately 5 to 7 minutes
  • Add eggs one at a time, mixing just until incorporated after each addition
  • Alternate adding dry and wet mixture to creamed butter and sugar; starting and ending with dry
  • Preheat oven to 350 °F
  • Liberally spray loaf pan with non stick cooking spray
  • Pour batter into prepared loaf pan, use an offset spatula to smooth the batter in the pan
  • Bake for 60 minutes, or until cake tester inserted in the center comes out clean
  • Remove from oven, allow pound cake to cool for 10 to 15 minutes before removing from pan
  • Transfer cake to a cooling rack to completely cool

Orange Vanilla Glaze

  • In a mixing bowl combine confectioners sugar, the juice and zest from the remaining orange, vanilla extract and whole milk
  • Whisk until completely smooth
  • Pour prepared glaze over the entire loaf
  • Allow 5 to 10 minutes for the glaze to set
  • Slice and enjoy

Notes

  • Valencia oranges, navel oranges or even cara cara are widely available year-round. They’re also great in this recipe because they tend to be very juicy.
  • When juicing the oranges be sure to strain the juice afterwards to avoid unwanted pulp and seeds in your pound cake and glaze
